Peanut Butter Cookies

Ingredients

1/2 cup butter

1 tsp. vanilla

1 cup granulated sugar

1 cup brown sugar

2 eggs

2 cups peanut butter

2-4 T. milk as needed

3 cups flour

1/4 tsp. salt

2 tsp. baking soda


Small bowl of granulated sugar or powdered sugar

Directions

Preheat oven to 350.

Mix wet ingredients until smooth, minus milk.

Mix dry ingredients, then incorporate into the wet. Add the milk as needed to make the dough cohesive. Cover with plastic wrap and let sit 30 minutes.

Form 1 1/2 inch balls. Roll in granulated sugar or powdered sugar.
Put on a lined sheet about 2 inches apart.
Press a fork into the ball in a criss cross pattern.

Bake at 350 for 9-11 minutes. Let sit 5 minutes before moving to a cooling rack.

Notes

*Good with candies or nuts mixed in. If you want to add a Hershey Kiss or small peanut butter cup, do not press with dough with a fork, and bake the cookies. Then, as soon as you pull them out, press it into the center.

*Splenda Cup for Cup in place of half the white sugar works well.
